LoLa's Food - Stylish Bellini Cocktail

As it is friday, I thought that I would share the recipe of one of my favorite cocktails, the Bellini. The Bellini was invented between 1934 and 1948 by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. He named it the Bellini, because the unique pink color reminded him of a toga he had seen in a painting by Venetian artist Giovanni Bellini. The drink started as a seasonal specialty at Harry's Bar, a favorite haunt of Ernest Hemingway, Sinclair Lewis and Orson Welles.

It is a rather girly champagne cocktail, that is great on a hot day, and best of all, it takes about 5 min. to prepare! Today we have a meter of snow in Switzerland, but with a Bellini I can dream my way back to the balcony at Hotel Luna, Capri.

1 peach
Peach liqueur
Champagne/Prosecco/Cava

Blend the peach with liqueur. Fill a champagne or cocktail glass with about 3 cm. of the purée, and fill with cold sparkling wine. Remember that the quality of the sparkles does not matter.
